Simple Homemade Lotus Root Soup with Peanuts 


350g of pork ribs
1 small lotus root
2 pieces of dried cuttlefish
9 red dates
50 grams of raw peanuts
1 cube of chicken stock
7 soup bowls of water
Salt

*all the above amount is depending on how much you are cooking, the recipe can be modified according your tastes and preferences.

Time needed: 10 minutes for preparation + 3 hours to boil = 3 hours 10 minutes

4 Simple steps:

1. Blanch the pork ribs in separate pot and strain it. This is to remove any debris and the pork smell.
2. Clean, peel and slice the lotus root before bringing them into the pot of water with all other ingredients except the seasoning in a soup pot. (For better results, try using ceramic pot).
3. Add in a pinch of salt and cook on medium heat for 2.5 hours before cooking on low heat for 30 minutes to prevent the soup from drying up.
4. Taste the soup if it requires more seasoning before serving the soup in a bowl and soy sauce condiment on the side.
